All Matcha is not created equal! The tea leaves are harvested at different times and it is very important to understand what matcha you are buying as taste and quality is key. We only sell Uru (Ultra Premium Grade) matcha that is harvested first and has a mild taste and vivid green colour.

Next you have Waka (Premium Grade) then you have Kiyo (Ceremonial Grade) which are more suited to cooking.

Having powdered tea is the same thing as eating the whole tea leaves as they are. Therefore, being organic is necessary. Our green tea leaves are grown in a foggy mountainside in Uji-tawara Town, Kyoto. And our green tea is certified as an organic agricultural product. Our farmers have over 30 years experience producing organic matcha and are always ahead of their time bringing us the highest quality product.

What is the difference between Sencha and Matcha?

The answer is very simple. The tea leaves themselves are grown in different ways. Matcha is made from ‘Tencha’. Tencha is the tea leaves that are covered under a shade in order to prevent from sunshine for more than 20 days before the harvest. Covering makes the tea leaves greener and tastier. After harvesting, the tea leaves are slowly and carefully steamed in a special steamer to make Tencha. The ground Tencha is what we call ‘Matcha’ It takes more time and needs more effort to make matcha, so matcha is comparatively expensive.

The well-drained calcareous soil and the climate there are the very reason why our tea is such high quality. Brazil Fazenda Pantano has received an award from Brazil’s most prestigious agricultural magazine “Globo Rural”. The magazine recently announced 4 national awards for Sustainable Practices in 4 categories; Meat Production, Perennial Crops, Annual Crops and Forestry. There were 189 finalists in the Perennial group which mostly consisted of orange growers. All of these 189 farms had to be audited with only 30 farms going into the final phase, and Brazil Fazenda Pantano came out on top! The auditors were assessing three main categories on each farm: food safety, environment and social factors.

The most impressive factor on Brazil Fazenda Pantano is Wagner’s realisation that each part of his land is different and requires varying levels of care. He is fastidious with waste and has plans in place to reduce the use of chemicals and water as much as possible in the coming years. Currently, Wagner’s farm is divided into plots which are made up of 1 hectare squares. He has conducted soil analysis on each hectare of his farm and prescribes individual treatment with water and pesticides accordingly. There is a meteorological station on site to ensure water is being used correctly, taking into account the following factors on each hectare:

• Daily necessity of water
• Amount of rain
• Retention of water in soil
• Effect of evaporation and wind
• Amount of ground water in first 40cm of soil

Once again, Pantano has been a pioneering farm in Minas Gerais being the first one in the region to treat each hectare individually. Wagner and Fazenda Pântano have become a world reference for sustainability and Falcon Speciality are very proud of their achievements. Not only are the coffees of outstanding quality but this commitment to a sustainable and ethical approach is a philosophy we both share.

Our Uva cherries are processed on the farm and the coffee is only hulled at the point of export and packed into grain pro sacks in order to preserve flavour and freshness. The farm supports a local school and also funds various training schemes and courses for its staff. It is certified by the Rainforest Alliance.

"You are what you eat" also applies to cows. Red meat does not cause cancer and is highly nutritious containing vitamin B12, B3, B6, bioavailable iron, selenium & zinc. Grass fed meat even more so has higher values of:

  • Vitamin A & E
  • Micronutrients
